St Matcha’s “YUME NO UKIHASHI” exemplifies the finest of Japanese matcha. This ceremonial grade matcha powder is made from select top grade tea leaves from Fukuoka, Japan. It has a rounded earthy flavour, robust umami profile and a gentle, lingering sweetness, making it perfect for brewing usucha (“thin” tea) as well as matcha latte.
Scoop 1 teaspoon (2g) of matcha into a Japanese matcha bowl (chawan) or round bottom cup. Add 2 teaspoons of room temperature water. Using matcha whisk, whip the mixture into a paste by rapidly whisking against the sides of the cup / bowl. Continue to whisk until all the clumps disappear. Add 1/3 cup (90ml) of hot water to the matcha paste. Stir the tea mixture with the matcha whisk, using rapid zigzag motion, until a layer of foam appears and enjoy.
